Over a week in on our month of veggies ...
and things are going really well.
I think I love it.
There have been a lot of recipes that are keepers.
Michael and I tried to think of something that was a bummer last night and couldn't.
Even this veggie slow cooker casserole that I was nervous about was delish!**
I have been meaning to share some more of what we are eating.
My excuse is that dinner time around here is crazy town.
It is late, and I am trying to keep the troops happy...
and out of the kitchen and off the dinning room table.
By the time Michael finally gets home...
it is dark, I have a baby on my lap, and everyone is hungry.
When I finally remember to take a picture of dinner...
it is scraps and crumbs.
But those scraps and crumbs make a great lunch.
So here is my not-very-recipe-y lunch recipe.
I have had something like this almost everyday.
Fridge Cleaning Veggie Wrap
Fridge Cleaning Veggie Wrap
1 wrap or tortilla
2 tablespoons hummus, pesto, salad dressing, salsa, or guacamole
1 cup leftover roasted/sautéed veggies from the night before
1 cup leftover rice, quinoa, couscous or roasted potatoes
1 cup leftover rice, quinoa, couscous or roasted potatoes
fresh toppings of tomato, lettuce, onion, cheese and/or cucumber
Pile it all on and eat.
Or you can warm it up in the stove
or I use our George Foreman grill press
or the microwave.
(Does anyone else still use a George Foreman?)
**We decided we would change the veggie casserole recipe by adding tomatoes to both layers,
adding mushrooms, and leaving out or changing the type of cheese.
The pre-shred Italian blend cheese isn't something we normally buy,
but maybe some good parmesan or asiago next time.

Holy cats! That looks great! You are most definitely on the right track for veg eating. It doesn't need to be complicated. I'm thrilled things are going well so far.
And yes, we still use a Foreman grill and we love it!

P.S. I have a letter all ready for you, I just have to get it to the mailbox. It's sounds easy enough, but we're all sick here, so it will take me getting out of my bath robe. : )
This is awesome! I wanna eat more veggies too! And feed my family nourishing foods! Keep up the good work :)
We still use our foreman grill. Especially with paninis and wraps. I feel you on the dinner being nothing but scraps when you get a chance to photograph it. Especially with a baby
