More Veggies

donut hand

Donuts for breakfast.
Normally they are treats around here.
Not a meal.

There are always exceptions...
especially when we are out of milk
and grandma and grandpa sent us home with a entire bag of powered deliciousness.

Great start to me taking about eating better right?
But that is where I am going.

donut for breakfast

Everyone wants to eat more veggies, right?
I have talked about making more vegetarian meals for our family.
Made goals and planned more vegetarian dinners...

I say it...
then I cook bacon.
Yummm...

So, to really do it.
To push myself to try some new recipes
and make them a permanent part of our meal rotation...

We are going meatless this month.

I have a long list of meals.
My fridge is full.
Farmstand full.

Good thing donuts aren't sprinkled with bacon...

carrots for breakfast

And as a redeemer...
Theodore had carrots that day for breakfast...
With only a lick or two of powered sugar brilliance.

We are reducing meat a lot and dairy too. My parents are doing forks over knives to help with cholesterol issues and having great results... Ben and I watched the documentary and were motivate to make changes! Made a yummy veggie whole wheat pasta tonight! You'll have to share some favorite recipes you discover on your meatless month! I have been making "100 days of real food"'s crock pot refried beans for weekday lunche

Fantastic! I'm super excited that your family will be vegetarian, even if just for a month! If you want some extra resources, I recently published a post about Meatless Mondays, with some links that you might find helpful. Good luck to you!

That bright-eyed sugar coated face was worth getting up for today! As for veggies...ummm, yes I should! Really hoping my head clears up a bit and my days calm down so I can focus a bit on the 'new' year!

I wish I could reply to Lindsay's comment above but don't see an option. Anyone considering good health should do what her parents did and watch Forks Over Knives. I read the books by those doctors and then anticipated and saw the film. That is nutrition that just can't be competed with!!

I wish you all the best with having more veggies and think it's a fantastic decision to make!

I'm so enamored by those moms that just serve healthy food to their children. I need to do it more! :-)

I was raised on veggies and fruits because meat was considered a luxury. Can you imagine raising seven children and serving up home made vegetable soups, pots of greens, beans, kale and that is the living proof that I never had a cavity until I was in my mid-life.
I stress to my family "you are what you eat."
